The Pie with Frosting!

It's a Pie! It's a Cake! No! It's a cookie cake pie and it's got FROSTING! I've seen this super desert on a couple of different websites with different combinations of cookie and cake. It is a pie with a cookie batter bottom, a cake in the middle, and frosting on top. Honestly anything frosted has to be good.
I couldn't think of a combination better than chocolate and peanut butter. A peanut butter cookie chocolate chip cookie dough bottom, a (box) chocolate cake filling, and a delicious peanut butter frosting on top that undoubtably stole the show, all wrapped in a flaky pie crust. Hands down this was an awesome idea and I have a few other cookie/cake/pie/frosting combinations I am itching to try. When I make this peanut butter butter and chocolate combination again I think I will use a chocolate graham cracker crust instead of a traditional pie crust.

Red White and Blueberry; Happy Memorial Day!






In honor of Memorial Day, and because my boyfriends favorite kind of pie is blueberry, I decided to make two blueberry pies for my first week. I had never made a blueberry pie and it was really quite easy. I am not going to lie and say I made the pie crust, for my first week I decided to ease in and take the easy (lazy) road and use a store bought pie crust. However, I received the highest pie complement when someone asked how I made my own crusts. I did own up to my store bought crust at that point. Some of the recopies I scoped out before making my own called for a cinnamon pie crust, so I did make a cinnamon egg wash to put on the top crust.

This pie was delicious and easy to make, I made two and I would say each took about 15 minutes of prep time and 50 minutes to an hour for bake time.

2 9" round pie crusts

Egg wash
1 egg
2 Tbs water
1 tsp cinnamon

Filling
5 cups washed blueberries
2 1/2 Tbs lemon juice
1 cup light brown sugar packed
1/3 cup flour
1 tsp cinnamon
1/2 tsp nutmeg
1-2 Tbs butter


Preheat the oven to 425. In a large bowl mix together the lemon juice, light brown sugar, flour, cinnamon and nutmeg. Incorporate blueberries, using your hands is best, insuring they are all coasted. Roll our your bottom crust in the pie plate and pour in the filling. Add pats of butter to the top of the filling before covering over with top crust. Crimp edges of top and bottom crust together and cut four slits in the top crust for venting.

To make egg wash, combine the egg, water and cinnamon in a bowl and whisk till mixed. Apply to the outer crust using a brush. I found this website to be helpful:

place in the oven at 425 for 30 minutes, then reduce temperature to 350 and bake for an additional 30 minutes, or until crust is golden brown. After the first 30 minutes, I put a cookie sheet covered with tin foil on the rack under the pie so the juices don't drip onto the bottom of the oven.

Over all Blueberry is one of my new favorites becasue it is so good and so easy!
